What happens when you freeze broccoli

Broccoli is one of the freezer’s success stories, provided it goes in blanched. Raw-frozen florets fade to olive and pick up a strong cabbage smell inside a couple of months; blanched ones stay green and mild for the full window. The stalks freeze as well as the crowns — peel them, cut them into coins, they’re the sweetest part. Expect softer florets on the other side: frozen broccoli roasts, stir-fries, and goes into soup, but it never comes back crisp enough for a raw platter.

How to freeze it right

  1. Cut the head into even florets; peel the stalk and slice it into coins.
  2. Boil just until the green turns vivid, then plunge everything into ice water.
  3. Drain hard and spread the pieces out to dry before they go in.
  4. Freeze loose on a tray, then bag with the air pressed out.
  5. Date the bag.

Thawing and using it

Cook it from frozen and don’t look back — onto a hot roasting tray, into the wok, into the soup pot. Thawing first only makes it watery. If you’re roasting, spread it out and don’t crowd the pan or it steams itself into mush.
