What happens when you freeze cooked fish & shellfish

Cooking drives water out of fish and shellfish once, and freezing and reheating does it again. The second round is the one you taste: a thawed salmon fillet rewarms chalky, and shrimp go springy. Flaked into something wet, none of that registers — fish cakes, chowder, salmon salad, seafood pasta, gumbo. The rule is simple. Freeze cooked seafood as an ingredient, not as a meal you plan to plate again.

How to freeze it right

  1. Chill it in the fridge first, then freeze it soon — don’t burn the 3–4 day fridge window before it goes in.
  2. Flake or portion it by the cup so it thaws fast and evenly.
  3. Pack flat in bags with the air out, or freeze it in its sauce, which shields it better than air ever will.
  4. Label the dish and date it — cooked shellfish gets 1–3 months, cooked fish a touch less.

Thawing and using it

Thaw overnight in the fridge, or tip the frozen portions straight into a simmering soup or sauce. Reheat gently and briefly — it’s already cooked, so you’re only warming it through. Never thaw it on the counter.
