What happens when you freeze crab
The shell does the work. King, snow, and dungeness legs freeze inside it, which keeps the meat from drying and holds the shape of every fiber — thawed legs steam back close to the day they were cooked. Fresh picked meat has no such protection. Exposed on every side, it loses moisture and turns stringy and a little flat, which is why USDA’s window for it is so much shorter than the one for legs.
How to freeze it right
- Freeze legs whole and unshelled — resist the urge to pick them first.
- Wrap clusters in plastic, then bag them with the air pressed out.
- Pack picked meat tight into a small container with no air gap, or seal it under its own liquid.
- Label legs versus picked meat and date both — the two windows are nothing alike.
Thawing and using it
Thaw crab overnight in the fridge, then steam or warm legs briefly; they’re already cooked, so heat is only for temperature. Picked meat is best used cold or folded in at the end — crab cakes, dip, salad, pasta. Never thaw crab on the counter.
Can you refreeze it?
Fridge-thawed crab can be refrozen safely, though picked meat comes back watery enough that it’s barely worth the bag. Legs handle it better — use them soon after.
