What happens when you freeze guacamole
USDA marks whole avocados not recommended for freezing but gives guacamole a proper window, and the difference is the mashing: there’s no slice left to slump and no structure left to wreck. What you lose is the fresh-cut brightness and every bit of crunch — chopped onion and tomato thaw limp and weep water into the bowl. Freeze the smooth part, which is avocado, lime, and salt, and stir the chopped things in after it thaws.
How to freeze it right
- Freeze the plain mash — avocado, lime juice, salt — and leave out the tomato, onion, and cilantro.
- Pack it into a small tub or a bag squeezed flat.
- Press plastic wrap right onto the surface; air is what turns it brown.
- Date the container.
Thawing and using it
Thaw in the fridge overnight or under cold running water, never on the counter. Stir it hard, then wake it up with fresh lime and salt before you fold in the onion, tomato, and cilantro. It’s a dip, a taco spread, and a sandwich layer — it is not a centerpiece.
