What happens when you freeze hot dogs

A hot dog is already cooked, cured, and emulsified into a smooth paste of meat and fat, so there’s no structure left for ice to wreck. Frozen and thawed, they snap and cook the same. Air is the only enemy: an opened pack refrozen loose lets the cut ends dry grey and rubbery, and the cure picks up freezer smells fast. How to freeze it right
