What happens when you freeze lobster
USDA marks live whole lobster not recommended for freezing, and that one is about safety rather than texture: a lobster has to be alive when it’s cooked, and the freezer settles that question the wrong way. Cook it, then freeze it. Cooked lobster freezes decently — sweet and intact while it’s still in the shell, more prone to stringy and cottony once it’s picked. The window USDA gives cooked tails is short, so treat frozen lobster as this month’s dinner, not next season’s.
How to freeze it right
- Cook a live lobster the day you bring it home — USDA gives it 1 day in the fridge and no freezer option at all.
- Freeze cooked tails in the shell; it keeps the meat from drying out.
- Wrap each tail tight in plastic and bag it, or freeze tails submerged in brine in a sealed container.
- Label and date — the window here is weeks, not months, and it is easy to forget that.
Thawing and using it
Thaw cooked lobster overnight in the fridge, then warm it gently in butter or broth — it’s cooked already, and a hard reheat turns it to rubber. Picked meat goes into rolls, bisque, mac and cheese, or salad. Never thaw lobster on the counter.
