What happens when you freeze pumpkin pie

Custard is water held in a set of egg proteins, and freezing pushes some of that water back out. A thawed pumpkin pie tastes right and slices right; what you notice is a thin damp layer where the filling meets the crust and a softer set through the middle. Baked and fully cooled before freezing gives the best result. USDA’s 1–2 months is a quality clock — the pie is perishable either way, with 3–4 days in the fridge once it’s baked.

How to freeze it right

  1. Bake the pie all the way through and cool it to room temperature; a warm pie steams itself soggy.
  2. Chill it in the fridge until cold and firm before you wrap it.
  3. Freeze it uncovered until the surface is solid, then wrap in plastic and foil.
  4. Freeze it whole — a cut pie dries at every exposed edge.
  5. Date the foil.

Thawing and using it

Thaw the pie overnight in the fridge, still wrapped, and blot the surface if it beads. Serve it cold or barely warm; a few minutes in a low oven firms the crust back up without setting the custard weeping again. Whipped cream goes on at the table.
