What happens when you freeze ribs

Ribs are fat, collagen, and bone, and all three shrug off freezing. Raw racks come back with nothing lost but a little purge in the bag. Cooked ribs do better still: the long, slow cook has already broken the collagen down, so a reheated rack is tender rather than tight, and smoke and sauce ride through the freezer intact. The failures are mechanical — bone tips tear thin plastic and let air in, and a rack curled into a bag traps pockets that frost over and burn.

How to freeze it right

  1. Cut a full rack into halves or thirds so it lies flat and wraps tight.
  2. Blunt the exposed bone tips with a folded square of foil before wrapping.
  3. Wrap in plastic, then foil or a freezer bag, working the air out as you go.
  4. Freeze cooked ribs with a spoonful of their sauce or cooking liquid — it keeps air off the meat.
  5. Label raw or cooked, and date it.

Thawing and using it

Thaw in the fridge, which a big rack needs a day or more for, or in a sealed bag under cold water. Never on the counter. Reheat cooked ribs wrapped in foil in a low oven until hot through, then open the foil under the broiler to bring the bark back. Raw racks go to the usual low-and-slow; cook to 145°F, though ribs are worth taking well past that for tenderness.
