What happens when you freeze smoked salmon

Smoking and salting have already pulled water out of the fish, and less water means smaller ice crystals and less damage. An unopened vacuum pack goes in exactly as it is and comes out with its sheen and its slip intact. Air-packed or opened salmon suffers more — the exposed surfaces dry and the smoke flavor sharpens. Either way, freezing costs a smoked side far less than it costs a fresh fillet.

How to freeze it right

  1. Freeze unopened vacuum packs as they are — the seal is already better than anything in your drawer.
  2. Divide an opened pack into a few slices per portion, with parchment between the layers.
  3. Wrap each portion tight, then bag it with the air pressed out.
  4. Date it and freeze it well before the fridge window closes — 14–30 days for air pack, a little longer for vacuum.

Thawing and using it

Thaw the sealed pack overnight in the fridge and open it cold — it slices cleanest that way, straight onto bagels, blini, salads, and scrambled eggs. Blot any weep with a paper towel. Never thaw it on the counter, and once it is open, eat it within a couple of days.
