What happens when you freeze tofu
This is the rare food where the freezer damage is the point. Ice crystals push through the curd and leave a honeycomb behind, so thawed tofu is firmer, chewier, and full of channels that soak up sauce. Pressed and fried, it browns better than a fresh block ever does. What you give up is the smooth, custardy side of tofu: silken tofu for soups and smoothies should stay in the fridge, where an unopened package keeps 1 week. USDA gives the freezer 5 months.
How to freeze it right
- Drain the water off the block, or freeze it sealed in the package exactly as it came.
- Cut it into slabs or cubes first if you want it to thaw fast.
- Freeze cubes apart on a sheet pan, then bag them so they don’t fuse into a brick.
- Expect the block to turn yellow-beige in the freezer — that’s the texture change, not spoilage.
- Label with the date.
Thawing and using it
Thaw overnight in the fridge or under cold running water, then squeeze the block gently between your palms — a surprising amount of water comes out, and that’s the room your marinade moves into. Cube it for stir-fries, curries, chili, and anything braised; it holds its shape and takes color the way fresh tofu can’t.
