What happens when you freeze yeast

Yeast is alive, and warmth and moisture spend it. USDA’s own note on the package is direct: keep it in a cool, dry place, and refrigerate or freeze it once it’s opened. Freezing doesn’t harm instant or active dry yeast — the cells are dormant and dehydrated, and cold simply holds them there. What does the damage is the cycle: a jar taken out, warmed on the counter, and put back with condensation inside it.

How to freeze it right

  1. Freeze unopened packets exactly as they come; the foil strip is already airtight.
  2. Tip an opened jar into a small airtight container or a double freezer bag.
  3. Squeeze the air out and keep the container as full as it will go.
  4. Scoop what a recipe needs with a dry spoon and reseal it immediately.
  5. Write the date you opened the package on the container.

Thawing and using it

Measure yeast straight from the freezer — it works cold, it just wakes up a little slower. For full speed, let the sealed container sit out until it loses its chill before opening.
