Can it sit out?

Unopened, soup base is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if soup base has gone bad

  • Mold on the paste or ringing the underside of the lid
  • A sour or fermented edge under the usual roasted smell
  • Paste gone watery or split, with liquid standing on top

When in doubt, throw it out.

The spoon that’s been in the pot never goes back in the tub — that’s how a base picks up mold early.
