How to tell if low-acid canned goods has gone bad

  • A swollen lid, or ends that flex under a thumb
  • Liquid that spurts or foams as the seal breaks
  • A yeasty, off smell from a can that should smell of almost nothing
  • Cloudy, milky liquid where the brine should run clear

When in doubt, throw it out.

Never taste a suspect can to settle the question — if it looks or smells wrong, it goes in the trash sealed.
