Can it sit out?
Unopened, low-acid canned goods is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.
Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).
How to tell if low-acid canned goods has gone bad
- A swollen lid, or ends that flex under a thumb
- Liquid that spurts or foams as the seal breaks
- A yeasty, off smell from a can that should smell of almost nothing
- Cloudy, milky liquid where the brine should run clear
When in doubt, throw it out.
Never taste a suspect can to settle the question — if it looks or smells wrong, it goes in the trash sealed.
