Can it sit out?
Whipping cream is perishable — the FSIS 2-hour rule applies.
Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).
How to tell if whipping cream has gone bad
- A tangy, sour smell at the spout
- Lumps or a skin that won’t shake back in
- Cream that refuses to take air no matter how long the whisk runs
- A yellow or brownish tint against the white
When in doubt, throw it out.
Ultra-pasteurized cream whips stiffer out of a chilled bowl with chilled beaters — five minutes in the freezer for both is the whole trick.
