How to tell if duck fat has gone bad

  • A sharp, rancid smell as the jar warms on the counter
  • A gray or greenish tint through the fat
  • Fuzz on the surface or around the sediment at the bottom
  • A bitter, off taste in potatoes cooked in it

When in doubt, throw it out.
