How to tell if used frying oil has gone bad

  • A sharp, varnish-like smell when the jar opens
  • Oil gone dark and syrupy where it used to pour thin
  • Foam building on the surface as it heats
  • Smoking at a temperature it handled fine last time

When in doubt, throw it out.

Oil that fried fish is fish oil now — keep it in its own jar, well away from the batch you use for doughnuts.
