How long does vacuum-packed ham last in the fridge?

2 weeks
Fridge, from purchase — USDA FoodKeeper guidance for ham (fully cooked, vacuum packed, boneless)

A sealed vacuum-packed boneless ham keeps 2 weeks in the fridge — double what a bone-in cooked ham gets, and the seal is doing all of that work.

How long does it keep?

Fridge, from purchase 2 weeks
Freezer, from purchase 1–2 months
Safe minimum temp 140°F

Can it sit out?

Vacuum-packed ham is perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if vacuum-packed ham has gone bad

  • A pack that has lost its vacuum and gone puffy or loose
  • Liquid inside the pack gone cloudy or ropy
  • A sour smell once the plastic is cut open

When in doubt, throw it out.

Once the seal is cut it behaves like any other cooked ham — rewrap it tight and work through it quickly.
