How to tell if pickled herring has gone bad

  • Sauce gone cloudy or ropy, stringing off the fork
  • A bulging lid, or a fizz when the jar opens
  • Fillets falling apart into mush
  • A sharply sour smell over the wine

When in doubt, throw it out.

Chop the last of the jar with apple and sour cream — the sauce has already done the seasoning for you.
