How long does it keep?

Pantry, from purchase 6–18 months
Fridge, opened 6–12 months

Can it sit out?

Unopened, jam is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if jam has gone bad

  • Fuzzy white, green, or gray spots on top — toss the jar rather than scooping around them
  • A boozy, fermented smell
  • Bubbles rising through the set, or a lid gone domed
  • Toast crumbs and butter streaks worked down into it

When in doubt, throw it out.

A clean dry spoon every time is the whole trick — a butter-loaded knife is what ends a jar early.
