How to tell if raw cod has gone bad

  • A sour or ammonia smell — fresh cod barely smells at all
  • Chalky, softened flesh with the flakes coming apart
  • A tacky, slippery surface on the fillet
  • Sunken, cloudy eyes on a whole fish
