Can it sit out?

Unopened, bottled marinade is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if bottled marinade has gone bad

  • A rancid smell off the oil in the blend
  • Layers that won’t come back together after a hard shake
  • Cloudy strands or fuzz hanging in the bottle
  • Crust and mold dried into the cap

When in doubt, throw it out.

Pour off the basting portion before the raw meat ever goes in — that’s the only marinade worth brushing on at the end.
