How to tell if dried mushrooms has gone bad

  • A damp, musty smell in place of a deep earthy one
  • Caps gone bendy and leathery instead of snapping
  • White bloom or fuzz on the pieces
  • Moisture beading on the inside of the bag

When in doubt, throw it out.

Strain the soaking liquid through a paper filter and use it — that’s where most of the flavour ends up, and the grit stays behind.
