How to tell if home-canned salsa has gone bad

  • A lid that flexes or clicks under your thumb instead of staying domed
  • Bubbles climbing a jar nobody has shaken
  • Liquid spurting or a rush of pressure as the seal gives
  • A dark ring or mold under the rim

When in doubt, throw it out.

Store the jars with the screw bands off — a band can hold a failed seal shut and keep you from seeing it.
