Can it sit out?

Unopened, tomato and pizza sauce is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if tomato and pizza sauce has gone bad

  • Mold freckles on the surface or up the sides of the container
  • A sharp, fermented smell cutting through the tomato
  • A lift or fizz when you stir it
  • A grayish film where the sauce meets the air

When in doubt, throw it out.

Tip leftovers out of the can and into a sealed tub — sauce left sitting on bare metal picks up a tinny edge overnight.
