Ground poultry is the most perishable thing in most carts, which makes the freezer the plan rather than the fallback. It holds up well frozen: leaner than beef, so there’s less fat to turn stale, and the mild flavor picks up little across 3–4 months if the wrap is honest. That leanness is also the catch — less fat means less protection from moisture loss, so a loosely wrapped pack cooks up dry and crumbly. Frozen flat and thawed in the fridge, it browns exactly like fresh.

How to freeze it right

1. Move it out of the store tray and into a freezer bag the day you buy it.
2. Press the meat flat and thin, corner to corner, then force the air out and seal.
3. Freeze the bags flat, then stack them upright once they’re solid.
4. Label turkey or chicken and the date — frozen, they’re identical.

Thawing and using it

Thaw a flat pack in the fridge and it’s ready by morning; a sealed bag under cold water is the fast route. Never the counter. Break it into a hot pan and cook it through to 165°F. It also goes straight from frozen into a saucy dish — low heat, lid on, scraping the softened layer away as it thaws.

Can you refreeze it?

Ground turkey thawed in the refrigerator may be refrozen safely, but it dries out badly on a second round. Brown it with onions first and freeze that — it comes back as the start of a meal instead of a chore.
