How to tell if baking powder has gone bad

  • No fizz at all when a spoonful hits hot water
  • A hard cake of powder you have to break with a knife
  • Damp lumps rolling around in the tin
  • Rust spots on the lid or the seam of the can

When in doubt, throw it out.
