Baked Goods & Baking Staples: How Long They Keep

Two different clocks run in this category. The bakery side — bread, rolls, cakes, pies, doughnuts, pastries — is short-window food: days on the counter, a little longer in the fridge, and the freezer is where most of it is genuinely rescued. The baking cupboard is the opposite, a shelf of flour, sugar, spices, extracts, oils, and leaveners measured in months and years, where the number that matters is the one after opening and what fades is potency and flavor rather than safety. The exception to watch is anything with dairy or egg in it — cream pies, cheesecake, quiche, custard fillings — which belongs in the fridge like the perishable it is.
