- Pinholes in the beans, or bugs in the bottom of the bag
- A musty, cellar-like smell
- Beans that stay stony after a long soak and a long simmer
When in doubt, throw it out.
Salt the soaking water and give an old bag longer on the heat — but beans that stay stony after all that are past their best, and more simmering won’t fix them.
