Can it sit out?
Cornstarch is shelf-stable, so sitting out at room temperature isn’t the safety question — storage time is.
How to tell if cornstarch has gone bad
- Hard lumps that survive a sieve
- A caked, packed surface where it used to pour like dust
- A musty smell where there should be almost no smell at all
- Webbing or specks moving in the box
When in doubt, throw it out.
Slurry it in cold water before it goes anywhere near a hot pan — tipped in dry it seizes into lumps that never dissolve.
