Can it sit out?

Unopened, frosting is shelf-stable. Once opened, treat it as perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if frosting has gone bad

  • A sour or fermented smell under the lid
  • Water beading on the surface or pooling at the edge
  • A grainy, split texture that won’t stir back smooth
  • Mold anywhere around the rim of the tub

When in doubt, throw it out.

Let refrigerated frosting come back to room temperature and whip it briefly — straight from the fridge it tears the cake.
