How to tell if dried herbs has gone bad

  • No lift at all when you crush a pinch under your thumb
  • Leaves gone from green to hay-brown
  • A dusty, musty smell where the herb used to be
  • Moisture beading on the inside of the lid

When in doubt, throw it out.

Buy the small jars — you’ll finish a little oregano long before a big one goes quiet, and it tastes like something the whole way through.
