How long does it keep?

Freezer 12 months

Can it sit out?

Puff pastry is perishable — the FSIS 2-hour rule applies.

Perishable food left at room temperature for more than 2 hours should be thrown out — 1 hour if it’s 90°F or hotter (a picnic, a hot car, a summer kitchen).

How to tell if puff pastry has gone bad

  • Thick frost or ice crystals built up over the sheet
  • Dough gone gray-brown and dried at the edges — freezer burn
  • A stale, absorbed freezer smell in the raw dough
  • Sheets that thawed at some point and fused into a solid block

When in doubt, throw it out.

Thaw it overnight in the fridge, never on the counter — warm butter melts into the flour and the layers never separate in the oven.
