How to tell if solid shortening has gone bad

  • A stale, crayon-like or paint smell when the lid lifts
  • Yellowing or darkened patches across the surface
  • A grainy or weeping texture in place of a smooth cream
  • A bitter aftertaste in a pastry made with it

When in doubt, throw it out.

Scoop with a clean dry spoon and smooth the surface back down — pits and crumbs left behind give the oil more air to work on.
